I have been seeing all kinds of recipes for overnight oats for YEARS. I have a vague memory of trying a recipe a long time ago, but I must have not liked it because I don’t really remember it. It’s very possible that I thought about trying it so much that my mind tricked me into thinking I actually tried it, even if it never happened. #mombrain
In any case, I finally tried a recipe I found from Autumn Calabrese. She is my tried and true when it comes to new recipes–I love her cookbook and cooking show on my streaming workout site, and everything I’ve ever made from her has been a hit! So when I saw this recipe for overnight oats, I knew I needed it in my life.
The only change I made was the type of oats I used–her original recipe calls for steel cut oats, and I only had old-fashioned rolled oats. It was still delicious, and I’ll be stocking up on steel cut oats when my current container runs out. I put a little unsweetened cocoa powder and sliced banana in with the oats and let it all sit overnight, and it was really yummy in the morning. Most recipes I saw said to wait to add your fruit, but I didn’t mind the banana mixing in with everything. If using any other type of fruit other than banana or apple, I would wait to add it in the morning, but it really is up to you and what you like.
The best part of this recipe is its versatility–you can add any toppings and fruit you want when you’re ready to eat it, which makes it perfect for all year. I can do pumpkin spice and apple in the fall and winter, I can do strawberries in the summer, and almond butter with banana any time of year. You can make it fit your taste completely!
21 Day Fix Overnight Oats Base Recipe (from Autumn Calabrese)
1/4 cup oats, either steel cut OR old-fashioned rolled
1/2 cup 2% plain Greek yogurt
1/2 cup unsweetened almond milk, plain or vanilla
1 cup fruit or choice or 1/2 banana, sliced
Toppings of choice–almond butter, chopped almonds, coconut flakes, etc
Combine the oats, yogurt, and milk in a small container, stirring to mix. Cover and let sit in fridge overnight. In the morning, uncover and add in toppings of your choice. Enjoy!
For my Portion Fix friends, this is 1 red, 1 yellow, and 1 purple, plus a tsp or orange container to account for any other toppings you add.
